Description

A delicious and comforting meal that combines tender chicken, creamy Alfredo sauce, and cheesy garlic bread, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 small chicken breasts
  • 1 Italian style loaf
  • 2 tablespoons poultry seasoning (or a mix of salt, pepper, and garlic powder)
  • 1 1/2 sticks unsalted butter
  • 2 tablespoons minced garlic (or garlic paste)
  • 2 tablespoons chopped parsley
  • 1 teaspoon crushed red pepper flakes
  • 2 tablespoons olive oil
  • 1/4 cup shredded parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup heavy cream

Instructions

  1. Cut the chicken breasts into ½ inch pieces. Place them in a bowl, drizzle with 1 tablespoon of olive oil, and season with 1 tablespoon of poultry seasoning.
  2. In a pan over medium heat, cook the chicken until it’s golden brown.
  3. Slice the bread in half lengthwise. In a small bowl, mix 1 stick of melted butter, 1 tablespoon of minced garlic, 1 tablespoon of chopped parsley, and 1 teaspoon of crushed red pepper flakes.
  4. Spread this butter mixture evenly on both halves of the bread. Toast the bread in a preheated oven at 350°F for 5-10 minutes.
  5. Using the same pan, heat it over medium-low heat. Add 1/2 stick of butter and let it melt. Stir in 1 tablespoon of minced garlic and cook for 2-3 minutes.
  6. Lower the heat and add 1/2 cup of heavy cream, 1/4 cup of shredded parmesan cheese, and 1 tablespoon of chopped parsley. Simmer on low heat until the sauce thickens slightly (about 3-5 minutes).
  7. Spread half of the sauce over the toasted bread. Layer with the cooked chicken, add mozzarella cheese, and then top with the remaining sauce.
  8. Place the bread back in the oven and bake at 350°F for another 5 minutes, or until the cheese is melted. Slice into 2-3 inch pieces and serve warm.

Notes

Store leftovers in an airtight container in the fridge. Reheat in the oven to regain crispy texture.
