Description

A tender, sweet, and savory chicken dish made effortlessly in a slow cooker, perfect for busy family meals.


Ingredients

  • 4 chicken thighs
  • 1 cup bell peppers (red, yellow, green)
  • 1/2 cup pineapple chunks
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon ginger (grated)
  • Salt and pepper to taste

Instructions

  1. In a crockpot, combine the soy sauce, brown sugar, sweet chili sauce, garlic, and ginger.
  2. Add the chicken thighs and coat them well with the sauce.
  3. Add the bell peppers and pineapple chunks on top of the chicken.
  4. Cook on low for 6-8 hours or on high for 4-5 hours until the chicken is cooked through and tender.
  5. When done, shred the chicken if desired and stir everything together before serving.

Notes

Trim excess fat from the thighs for less grease. Stir the sauce once or twice during cooking if you can. Use fresh pineapple for better flavor.
