Description

A flavorful and healthy dish that brings the taste of the Mediterranean right to your table with a delicious filling of spinach, feta cheese, sun-dried tomatoes, and olives.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup Kalamata olives, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine spinach, feta, sun-dried tomatoes, olives, garlic, oregano, salt, and pepper.
  3. Carefully slice a pocket into each chicken breast and fill it with the mixture.
  4. Secure with toothpicks if needed.
  5. Heat olive oil in a skillet over medium-high heat and sear each stuffed chicken breast for 3-4 minutes on each side until golden brown.
  6. Transfer to a baking dish and drizzle with lemon juice.
  7. Bake for 20-25 minutes or until the chicken is cooked through.
  8. Let rest for a few minutes before serving.

Notes

Make sure to not overstuff the chicken breasts; a little filling goes a long way. You can substitute spinach with other greens like kale or Swiss chard.
