- 4 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup Kalamata olives, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine spinach, feta, sun-dried tomatoes, olives, garlic, oregano, salt, and pepper.
- Carefully slice a pocket into each chicken breast and fill it with the mixture.
- Secure with toothpicks if needed.
- Heat olive oil in a skillet over medium-high heat and sear each stuffed chicken breast for 3-4 minutes on each side until golden brown.
- Transfer to a baking dish and drizzle with lemon juice.
- Bake for 20-25 minutes or until the chicken is cooked through.
- Let rest for a few minutes before serving.
Notes
Make sure to not overstuff the chicken breasts; a little filling goes a long way. You can substitute spinach with other greens like kale or Swiss chard.
