Ingredients

- 2 cups cooked chicken, diced
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chicken, black beans, corn, bell pepper, avocado, red onion, and cilantro.
- In a separate bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for up to 2 hours before serving.
Notes
For best texture, add avocado just before serving. Refrigerate leftovers without dressing for up to 2 days.
