Description

This flavorful Southeast Asian Chicken Satay is quick to prepare, featuring tender chicken marinated in a creamy peanut sauce with a hint of coconut.

Ingredients

Scale
  • 1 lb chicken breast
  • 1/4 cup soy sauce
  • 1/3 cup peanut butter
  • 1/2 cup coconut milk
  • 2 tbsp lime juice

Instructions

  1. Slice the chicken breast into thin strips.
  2. In a bowl, mix soy sauce, peanut butter, coconut milk, and lime juice to create the marinade.
  3. Add the chicken strips to the marinade and let them soak for at least 30 minutes.
  4. Preheat your grill or grill pan.
  5. Thread the marinated chicken onto skewers.
  6. Grill the skewers for about 5-7 minutes on each side or until cooked through.
  7. Serve with homemade peanut sauce.

Notes

Marinate chicken for at least 30 minutes, or up to 4 hours for enhanced flavor. Soak wooden skewers in water for 20 minutes to prevent burning.
