Description

A simple and tasty meal featuring tender chicken cooked with refreshing lemon and herbs, perfect for busy days.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons (juiced and zested)
  • 3 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 cups cooked rice
  • Fresh parsley for garnish

Instructions

  1. In a slow cooker, combine lemon juice, lemon zest, garlic, olive oil, thyme, rosemary, salt, and pepper. Mix well.
  2. Add the chicken breasts to the slow cooker and coat them with the lemon herb mixture.
  3. Pour in the chicken broth to help keep the chicken moist while cooking.
  4. Cover and cook on low for 360-420 minutes or high for 180-240 minutes, until the chicken is cooked through and tender.
  5. Once done, shred the chicken using two forks and stir it back into the sauce.
  6. Serve over fluffy cooked rice and garnish with fresh parsley if desired.

Notes

For extra flavor, marinate the chicken in the lemon herb mixture for a few hours before cooking.
