- 4 boneless, skinless chicken breasts
- 2 lemons (juiced and zested)
- 3 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup chicken broth
- 2 cups cooked rice
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine lemon juice, lemon zest, garlic, olive oil, thyme, rosemary, salt, and pepper. Mix well.
- Add the chicken breasts to the slow cooker and coat them with the lemon herb mixture.
- Pour in the chicken broth to help keep the chicken moist while cooking.
- Cover and cook on low for 360-420 minutes or high for 180-240 minutes, until the chicken is cooked through and tender.
- Once done, shred the chicken using two forks and stir it back into the sauce.
- Serve over fluffy cooked rice and garnish with fresh parsley if desired.
Notes
For extra flavor, marinate the chicken in the lemon herb mixture for a few hours before cooking.
