A simple and flavorful slow cooker chicken cacciatore that’s perfect for busy weeknights and relaxed weekends.

- 4 chicken thighs or breasts
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Sear the chicken on both sides until browned, then transfer to the crock pot.
- In the same skillet, add diced onion, garlic, and bell pepper, sauté until softened.
- Pour in the diced tomatoes and chicken broth, add Italian seasoning, salt, and pepper. Stir well.
- Pour the mixture over the chicken in the crock pot.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
- Serve with potatoes or pasta.
Notes
Sear the chicken well for more flavor. Use bone-in thighs for richer flavor and moist meat.
