Description

A simple and flavorful slow cooker chicken cacciatore that’s perfect for busy weeknights and relaxed weekends.


Ingredients

Scale
  • 4 chicken thighs or breasts
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the chicken on both sides until browned, then transfer to the crock pot.
  2. In the same skillet, add diced onion, garlic, and bell pepper, sauté until softened.
  3. Pour in the diced tomatoes and chicken broth, add Italian seasoning, salt, and pepper. Stir well.
  4. Pour the mixture over the chicken in the crock pot.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
  6. Serve with potatoes or pasta.

Notes

Sear the chicken well for more flavor. Use bone-in thighs for richer flavor and moist meat.
