A delicious and easy shredded buffalo chicken sandwich featuring tender chicken coated in spicy buffalo sauce, customizable with cheese and fresh toppings.

- 2 lbs boneless, skinless chicken breasts or thighs
- 1/2 cup buffalo wing sauce (like Frank’s RedHot)
- 1/4 cup butter, melted
- 2 tablespoons cream cheese, softened
- 1 packet ranch seasoning mix
- 1/2 cup chicken broth
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 8 sandwich buns or sub rolls
- 8 slices of your favorite cheese (cheddar, provolone, or Swiss)
- 1 cup shredded lettuce
- 2 medium tomatoes, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup mayonnaise or ranch dressing
- Additional buffalo sauce for serving
Instructions
- Place the chicken in a slow cooker or large skillet. Season with salt, pepper, garlic powder, and onion powder.
- In a bowl, mix together buffalo wing sauce, melted butter, cream cheese, ranch seasoning, and chicken broth until smooth.
- Pour the sauce over the chicken in the slow cooker and cook on low for 4-6 hours or high for 2-3 hours until tender. For stovetop, simmer for 20-25 minutes.
- Shred the chicken with two forks and mix it with the sauce.
- Prepare vegetables and toast the sandwich buns.
- Spread mayonnaise or ranch dressing on each bun, then assemble with lettuce, buffalo chicken, cheese, tomato, and onion.
- Optional: Grill the assembled sandwich in a skillet until the cheese melts and bread is golden brown.
Notes
Use chicken thighs for juicier sandwiches. Adjust the buffalo sauce heat level to your preference.
