Description

A classic dish with tender chicken, salty bacon, and vegetables simmered in red wine, perfect for family gatherings.


Ingredients

  • 4 chicken drumsticks
  • 4 chicken thighs
  • 4 slices of bacon
  • 2 cups red wine
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove it from the skillet and set aside.
  2. In the same skillet, add olive oil and brown the chicken pieces on all sides. Remove and set aside.
  3. Add the onion and garlic to the skillet and cook until soft.
  4. Stir in the flour and cook for 1 minute.
  5. Pour in the red wine and chicken broth, scraping up any brown bits from the skillet.
  6. Add the chicken back to the skillet along with the carrots, mushrooms, and bacon.
  7. Bring to a simmer, cover, and cook for 30-40 minutes until the chicken is cooked through.
  8. Season with salt, pepper, and fresh thyme.

Notes

Serve with mashed potatoes, rice, or cauliflower mash for a satisfying meal. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
