- 4 chicken drumsticks
- 4 chicken thighs
- 4 slices of bacon
- 2 cups red wine
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 cup mushrooms, sliced
- 2 tablespoons flour
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- In a large skillet, cook the bacon over medium heat until crispy. Remove it from the skillet and set aside.
- In the same skillet, add olive oil and brown the chicken pieces on all sides. Remove and set aside.
- Add the onion and garlic to the skillet and cook until soft.
- Stir in the flour and cook for 1 minute.
- Pour in the red wine and chicken broth, scraping up any brown bits from the skillet.
- Add the chicken back to the skillet along with the carrots, mushrooms, and bacon.
- Bring to a simmer, cover, and cook for 30-40 minutes until the chicken is cooked through.
- Season with salt, pepper, and fresh thyme.
Notes
Serve with mashed potatoes, rice, or cauliflower mash for a satisfying meal. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
