  • 1 cup fresh pineapple chunks (or canned pineapple, drained)
  • 1/2 cup barbecue sauce (divided)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup barbecue sauce (for glaze)
  • 2 tablespoons pineapple juice
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon fresh cilantro, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Pat the chicken breasts dry and place them in a large baking dish.
  2. In a small bowl, combine garlic powder, onion powder, smoked paprika, salt, black pepper, and optional cayenne pepper. Rub the olive oil on the chicken and coat it with the spice mixture.
  3. Arrange pineapple chunks around the chicken and drizzle 1/4 cup barbecue sauce over everything.
  4. Cover the dish with aluminum foil and bake for 20 minutes.
  5. Prepare the glaze by whisking together the remaining 1/4 cup barbecue sauce, pineapple juice, honey, and apple cider vinegar in a small bowl.
  6. Remove the foil, brush the glaze over the chicken and pineapple, and bake uncovered for an additional 10-15 minutes until the internal temperature reaches 165°F (74°C).
  7. For extra caramelization, turn on the broiler for 2-3 minutes, watching carefully to avoid burning.
  8. Let the chicken rest for 10 minutes before slicing. Garnish with green onions, cilantro, and sesame seeds before serving.

Notes

Pound chicken breasts to an even thickness for uniform cooking. Use a meat thermometer to ensure they are cooked thoroughly, and do not skip the resting time for juiciness.
