Description

An innovative twist on the classic Italian Caprese salad, this Peach Caprese Grilled Chicken combines juicy grilled peaches, creamy fresh mozzarella, and aromatic basil for a delicious summer dish.


Ingredients

  • 4 boneless, skinless chicken breasts (68 oz each)
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 3 large ripe peaches, sliced into 1/2-inch thick rounds
  • 8 oz fresh mozzarella cheese, sliced into 1/4-inch thick rounds
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons balsamic glaze
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Additional fresh basil leaves, for garnish
  • Balsamic reduction, for drizzling
  • Flaky sea salt, for garnish

Instructions

  1. Pound the chicken breasts to an even 3/4-inch thickness. In a large bowl, combine olive oil, Italian seasoning, garlic powder, salt, pepper, and paprika. Add the chicken and toss to coat. Let marinate for at least 10 minutes.
  2. Wash and slice the peaches, then brush with a mixture of 1 tablespoon olive oil, honey, and a pinch of salt.
  3. Preheat the grill to medium-high heat (400-425°F), cleaning and oiling the grates.
  4. Place marinated chicken on the grill and cook for 6-7 minutes without moving. Flip and cook for 5-6 minutes more until the internal temperature reaches 165°F. Let the chicken rest for 5 minutes.
  5. Grill the peaches for 2-3 minutes per side until caramelized. Remove and set aside.
  6. Assemble the Caprese topping by arranging grilled peach slices on each chicken breast, followed by mozzarella slices and torn basil leaves, then drizzle with balsamic glaze.
  7. Transfer to a serving platter, drizzle with olive oil and balsamic reduction, and garnish with flaky sea salt and extra basil leaves.

Notes

Choose ripe but firm peaches for the best grilling results. You can substitute with nectarines for a different flavor profile.
