Ingredients

  • 8 bone-in, skin-on chicken thighs (about 3 pounds)
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)
  • 1 lemon, sliced into rounds
  • 3 cloves fresh garlic, minced
  • 2 tablespoons fresh rosemary, chopped

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with aluminum foil.
  2. Remove the chicken thighs from the refrigerator 30 minutes before cooking and pat them dry with paper towels.
  3. In a small bowl, mix garlic powder, onion powder, paprika, thyme, oregano, salt, black pepper, smoked paprika, and cayenne pepper to create a seasoning blend.
  4. Drizzle olive oil over the chicken thighs, rub it in, and generously season both sides with the spice mixture.
  5. Place the seasoned chicken thighs skin-side up on the prepared baking sheet, scatter lemon slices and garlic around them, and sprinkle with fresh rosemary.
  6. Bake in the preheated oven for 35-45 minutes, until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  7. Let the chicken rest for 5 minutes before serving.

Notes

For extra crispy skin, consider using a wire rack and avoid overcrowding the pan. Brining the chicken beforehand can enhance moisture and flavor.
