- 8 bone-in, skin-on chicken thighs (about 3 pounds)
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper (optional)
- 1 lemon, sliced into rounds
- 3 cloves fresh garlic, minced
- 2 tablespoons fresh rosemary, chopped
Instructions
- Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with aluminum foil.
- Remove the chicken thighs from the refrigerator 30 minutes before cooking and pat them dry with paper towels.
- In a small bowl, mix garlic powder, onion powder, paprika, thyme, oregano, salt, black pepper, smoked paprika, and cayenne pepper to create a seasoning blend.
- Drizzle olive oil over the chicken thighs, rub it in, and generously season both sides with the spice mixture.
- Place the seasoned chicken thighs skin-side up on the prepared baking sheet, scatter lemon slices and garlic around them, and sprinkle with fresh rosemary.
- Bake in the preheated oven for 35-45 minutes, until the internal temperature reaches 165°F (74°C) and the skin is crispy.
- Let the chicken rest for 5 minutes before serving.
Notes
For extra crispy skin, consider using a wire rack and avoid overcrowding the pan. Brining the chicken beforehand can enhance moisture and flavor.
