- 1 lb chicken breast, cut into strips
- 1 cup rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish (optional)
Instructions
- In a large pan, heat olive oil over medium heat.
- Season the chicken strips with salt, pepper, and Italian seasoning.
- Add the chicken to the pan and cook until browned and cooked through, about 5-7 minutes.
- Add the garlic and cook for another minute until fragrant.
- Stir in the rice, then add the chicken broth and heavy cream.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- Stir in the Parmesan cheese until creamy.
- Serve hot, garnished with fresh parsley if desired.
Notes
