Description

A comforting one-pan dish featuring tender chicken, creamy rice, and rich Parmesan sauce, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breast, cut into strips
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Season the chicken strips with salt, pepper, and Italian seasoning.
  3. Add the chicken to the pan and cook until browned and cooked through, about 5-7 minutes.
  4. Add the garlic and cook for another minute until fragrant.
  5. Stir in the rice, then add the chicken broth and heavy cream.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  7. Stir in the Parmesan cheese until creamy.
  8. Serve hot, garnished with fresh parsley if desired.

Notes

For best texture, do not freeze the leftovers, but you can store in an airtight container in the fridge for up to 3 days.
