- 4 chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, add the uncooked rice, chopped onion, minced garlic, and mixed vegetables.
- Place the chicken on top and season with paprika, salt, and pepper.
- Pour the chicken broth over the rice and chicken. Drizzle with olive oil.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
