Description

A delicious one-pan meal featuring chicken breasts marinated in balsamic vinegar, garlic, and herbs, served with cherry tomatoes and spinach.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 cup baby spinach

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper.
  3. Place the chicken breasts in a baking dish and pour the balsamic mixture over them.
  4. Add cherry tomatoes and baby spinach around the chicken.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  6. Serve warm, drizzled with the pan juices.

Notes
