Description
A simple and hands-off recipe for a moist and flavorful whole chicken cooked in a crockpot.
Ingredients

- 1 whole chicken (4–5 lbs)
- 2 tbsp olive oil or butter
- 1½ tsp salt
- 1 tsp black pepper
- 1½ tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp smoked paprika (optional)
- 1 yellow onion, quartered
- 4 garlic cloves, smashed
- 2 carrots, chopped
- 2 celery stalks
- 1 lemon, halved
- Fresh herb sprigs (optional)
Instructions
- Pat chicken dry and rub with olive oil and seasoning blend.
- Stuff cavity with lemon and fresh herbs.
- Layer the vegetables (onion, garlic, carrots, celery) in the bottom of the crockpot.
- Place chicken breast-side up on top of the vegetables.
- Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
- Optional: broil for 4–5 minutes for crispy skin.
- Let the chicken rest for 10–15 minutes before carving.
- Carve and serve with pan juices over slices and vegetables.
Notes
For crisper skin, broil for a few minutes at the end. Allow chicken to rest for better texture.
