Description

Crispy golden fried chicken tucked between fluffy waffles, drizzled with maple syrup – the perfect handheld party appetizer.


Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs, separated
  • 1 3/4 cups whole milk
  • 1/3 cup melted unsalted butter
  • 1 1/2 pounds boneless, skinless chicken thighs, cut into 12 small pieces
  • 1 cup buttermilk
  • 2 cups all-purpose flour (for chicken coating)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • Vegetable oil for frying (about 4 cups)
  • 1/2 cup maple syrup
  • 4 tablespoons honey butter
  • 12 pickle slices
  • Hot sauce (optional)
  • Fresh chives for garnish

Instructions

  1. Prepare the chicken marinade: Place chicken pieces in a bowl, cover with buttermilk, and refrigerate for at least 30 minutes.
  2. Make the waffle batter: Whisk together flour, sugar, baking powder, and salt. Combine wet ingredients and mix with dry ingredients until just combined.
  3. Whip the egg whites until stiff peaks form and fold into the batter.
  4. Cook mini waffles until golden brown in a preheated waffle maker.
  5. Prepare the chicken coating by mixing flour and seasonings in a separate bowl.
  6. Heat oil to 350°F (175°C) in a pot.
  7. Remove chicken from buttermilk, dredge in flour mixture, and fry in batches until golden brown and cooked through.
  8. Assemble sliders: Spread honey butter on waffles, add fried chicken, drizzle with maple syrup, and top with a pickle slice.
  9. Garnish with fresh chives and serve immediately.

Notes

Serve with extra maple syrup and hot sauce on the side for customization.
