- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup all-purpose flour, for dredging
- 2 tablespoons olive oil
- 4 tablespoons butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
Instructions
- Season chicken breasts with salt and pepper, then dredge in flour.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
- Add chicken and cook until golden brown on both sides, about 4-5 minutes per side.
- Remove chicken from skillet and set aside.
- In the same skillet, add chicken broth and lemon juice, scraping up any browned bits.
- Stir in remaining butter and parmesan cheese, then return chicken to the skillet.
- Simmer for a few minutes until chicken is cooked through and sauce is slightly thickened.
- Garnish with fresh parsley before serving.
Notes
For a stronger lemon flavor, add more lemon juice. Make sure not to overcrowd the skillet for a nice golden brown crust.
