Description

A delightful dish that combines the zesty tang of lemon with savory chicken, perfect for weeknight dinners or special occasions.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season chicken breasts with salt and pepper, then dredge in flour.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  3. Add chicken and cook until golden brown on both sides, about 4-5 minutes per side.
  4. Remove chicken from skillet and set aside.
  5. In the same skillet, add chicken broth and lemon juice, scraping up any browned bits.
  6. Stir in remaining butter and parmesan cheese, then return chicken to the skillet.
  7. Simmer for a few minutes until chicken is cooked through and sauce is slightly thickened.
  8. Garnish with fresh parsley before serving.

Notes

For a stronger lemon flavor, add more lemon juice. Make sure not to overcrowd the skillet for a nice golden brown crust.
