Description

A creamy, low-carb casserole featuring garlic, mushrooms, and chicken, baked until bubbly and golden.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté mushrooms until browned.
  3. Add minced garlic and cook for another minute.
  4. In a bowl, combine cooked chicken, sautéed mushrooms, heavy cream, chicken broth, Italian seasoning, salt, and pepper.
  5. Transfer the mixture to a greased baking dish and top with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.
  7. Garnish with fresh parsley before serving.

Notes

Use cooked chicken from a rotisserie to save time. Let the casserole cool before storing, and reheat it for best results.
