- 2 cups warm water
- 2 tablespoons kosher salt
- 1 tablespoon brown sugar
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)
- 1 teaspoon fresh thyme leaves
- Fresh herbs for garnish (parsley, thyme, or rosemary)
- Lemon wedges
Instructions
- Prepare the brine by dissolving salt and brown sugar in warm water.
- Brine the chicken breasts for 15-30 minutes.
- Prepare the marinade by whisking together olive oil, lemon juice, garlic, oregano, paprika, black pepper, onion powder, cayenne pepper, and thyme.
- Marinate the chicken for 10 minutes after brining.
- Preheat the grill to medium-high heat (400-425°F).
- Grill the chicken for 6-7 minutes per side until internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes before slicing.
- Slice the chicken against the grain and garnish with fresh herbs and lemon wedges.
Notes
For best results, pound the chicken to an even thickness and avoid overcrowding on the grill. Always oil the grates to prevent sticking.
