Description

A comforting Chicken Pie filled with tender chicken, vegetables, and wrapped in golden puff pastry, perfect for family dinners or gatherings.


Ingredients

  • 1 lb (450g) chicken, diced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) milk
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 sheet puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, melt the butter over medium heat and sauté the onion, carrots, and celery until softened.
  3. Add the garlic and diced chicken, cooking until the chicken is browned.
  4. Stir in the flour and cook for 1 minute.
  5. Gradually add the chicken broth and milk, stirring until it thickens.
  6. Add thyme, salt, and pepper, then remove from heat.
  7. Pour the chicken mixture into a pie dish.
  8. Cover with puff pastry, trim the edges, and make a few slits on top for steam.
  9. Brush with the beaten egg.
  10. Bake for 25-30 minutes, or until golden brown. Enjoy!

Notes

Feel free to add favorite vegetables like peas or corn. Don’t skip the egg wash for a shiny finish. Leftover roast chicken can make this recipe quicker.
