A comforting Chicken Pie filled with tender chicken, vegetables, and wrapped in golden puff pastry, perfect for family dinners or gatherings.

- 1 lb (450g) chicken, diced
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 cup (240ml) chicken broth
- 1 cup (240ml) milk
- 2 tablespoons flour
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 sheet puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, melt the butter over medium heat and sauté the onion, carrots, and celery until softened.
- Add the garlic and diced chicken, cooking until the chicken is browned.
- Stir in the flour and cook for 1 minute.
- Gradually add the chicken broth and milk, stirring until it thickens.
- Add thyme, salt, and pepper, then remove from heat.
- Pour the chicken mixture into a pie dish.
- Cover with puff pastry, trim the edges, and make a few slits on top for steam.
- Brush with the beaten egg.
- Bake for 25-30 minutes, or until golden brown. Enjoy!
Notes
Feel free to add favorite vegetables like peas or corn. Don’t skip the egg wash for a shiny finish. Leftover roast chicken can make this recipe quicker.
