Description

A simple, spicy, and sweet chicken dish that is quick to prepare and perfect for a weeknight dinner.


Ingredients

  • 2 lbs chicken thighs
  • 1 medium onion, chopped
  • 23 jalapeño peppers, diced
  • ¼ cup soy sauce
  • 2 tbsp honey
  • 2 tbsp sesame seeds
  • 2 cups cooked rice
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced

Instructions

  1. Cut chicken thighs into bite-sized pieces and season with salt.
  2. In a pan, heat oil and sauté onions until translucent.
  3. Add chicken and cook until browned.
  4. Stir in diced jalapeños, garlic, and ginger, cooking for a few more minutes.
  5. Add soy sauce and honey, mixing well to coat the chicken.
  6. Let it simmer until the sauce thickens.
  7. Serve the chicken over a bed of rice and garnish with sesame seeds.

Notes

For a milder dish, remove the seeds from the jalapeños. Pair with lime wedges for a bright touch.
