  • 3 tablespoons butter
  • 23 tablespoons hot sauce (adjust to taste)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes
  • Pinch of salt
  • 68 cups vegetable oil (or enough for deep frying)

Instructions

  1. Marinate the Chicken: Combine buttermilk, hot sauce, salt, pepper, garlic powder, and onion powder in a bowl. Add chicken strips and refrigerate for at least 30 minutes.
  2. Prepare the Breading Station: In a shallow dish, mix flour, cornstarch, paprika, cayenne, garlic powder, onion powder, salt, pepper, and thyme.
  3. Heat the Oil: Heat oil in a pot to 350°F (175°C).
  4. Prepare the Hot Honey Glaze: In a saucepan, combine honey, butter, hot sauce, apple cider vinegar, red pepper flakes, and salt. Whisk until smooth and simmer for 2-3 minutes.
  5. Bread the Chicken Strips: Remove chicken from marinade and dredge in the seasoned flour mixture, ensuring a good coating.
  6. Fry the Chicken Strips: Fry 4-5 strips at a time until golden brown and internal temperature reaches 165°F (74°C).
  7. Drain and Glaze: Place fried chicken on a wire rack to drain, then brush with hot honey glaze.
  8. Serve: Arrange on a platter and drizzle with remaining glaze. Serve hot.
