Description

A delicious and healthy honey mustard chicken wrap featuring crispy chicken, homemade honey mustard sauce, and fresh vegetables, perfect for lunch or meal prep.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breast, cut into strips
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)
  • 1/4 cup Dijon mustard
  • 1/4 cup whole grain mustard
  • 1/3 cup healthy honey
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas (10-inch)
  • 2 cups mixed greens or lettuce
  • 1 large tomato, sliced
  • 1/2 red onion, thinly sliced
  • 1 cucumber, julienned
  • 1/2 cup shredded cheddar cheese
  • 1 avocado, sliced (optional)

Instructions

  1. Prepare the Homemade Honey Mustard Sauce: In a medium bowl, whisk together Dijon mustard, whole grain mustard, and honey. Add mayonnaise, apple cider vinegar, and garlic powder, whisk until smooth. Season with salt and pepper to taste.
  2. Set Up Your Breading Station: Use three shallow dishes; place flour seasoned with salt and pepper in the first, beaten eggs in the second, and combine panko breadcrumbs with garlic powder and paprika in the third.
  3. Prepare the Chicken: Pat chicken dry. Dredge each strip in flour, dip in eggs, and coat in breadcrumbs.
  4. Cook the Crispy Chicken: Heat olive oil in a skillet over medium-high heat. Add breaded chicken strips, cook 3-4 minutes per side until golden and cooked through.
  5. Prepare the Vegetables: Wash mixed greens, slice tomato and red onion, julienne cucumber.
  6. Warm the Tortillas: Briefly warm tortillas in a skillet or microwave for 10-15 seconds.
  7. Assemble Your Wraps: Spread 2-3 tablespoons of sauce on each tortilla, layer vegetables, cheese, and chicken strips. Add avocado if desired.
  8. Roll the Wraps: Fold the bottom edge up over filling, fold in the sides, and roll tightly. Cut diagonally before serving.

Notes

For extra crispy chicken, consider double-dipping in egg and breadcrumbs. Prepare the sauce ahead for improved flavor.
