Description

Delicious honey-lime marinated chicken skewers that are perfect for summer gatherings.


Ingredients

  • 3 pounds boneless, skinless chicken thighs, cut into -inch pieces
  • 2 red bell peppers, cut into 1-inch pieces
  • 2 yellow bell peppers, cut into 1-inch pieces
  • 1 large red onion, cut into wedges
  • 2 zucchini, sliced into thick rounds
  • ½ cup fresh lime juice (about 68 limes)
  • ¼ cup honey
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon lime zest
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • Fresh cilantro, chopped (for serving)
  • Lime wedges (for serving)
  • Cooked rice or quinoa (for serving)
  • Grilled corn on the cob (for serving)

Instructions

  1. In a large mixing bowl, whisk together lime juice, honey, olive oil, minced garlic, soy sauce, and lime zest until the honey is completely dissolved. Add cumin, chili powder, smoked paprika, salt, black pepper, and cayenne (if using). Mix thoroughly.
  2. Add chicken pieces to the marinade, ensuring every piece is well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. While the chicken marinates, prep your vegetables by cutting them into similar-sized pieces.
  4. Remove chicken from marinade, reserving the liquid. Thread chicken and vegetables alternately onto skewers.
  5. Preheat grill to medium-high heat. Clean and oil the grill grates.
  6. Pour reserved marinade into a small saucepan and bring to a boil for 3-4 minutes. Reduce heat and simmer until thickened, about 5 minutes.
  7. Place skewers on the grill and cook for 12-15 minutes, turning every 3-4 minutes. Brush with the boiled marinade glaze towards the end of cooking.
  8. Let skewers rest for 3-5 minutes before serving. Garnish with fresh cilantro and serve with lime wedges.

Notes

Chicken thighs are recommended for juiciness. For a spicy version, increase cayenne pepper. Skewers can be assembled a day in advance.
