A warm and hearty homemade chicken soup perfect for comfort on cold days.
Ingredients

- 2 chicken breasts, poached
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup green beans, chopped
- 1 teaspoon fresh thyme
- 1 teaspoon fresh parsley
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat.
- Add the onions and garlic, and sauté until translucent.
- Add the carrots and celery, cooking for about 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the poached chicken breasts, green beans, thyme, and parsley.
- Season with salt and pepper.
- Simmer for 20-30 minutes, allowing the flavors to meld.
- Remove the chicken, shred it, and return it to the pot.
- Serve hot.
Notes
For a creamier soup, add a splash of cream or milk towards the end of cooking.
