Description

A delicious and comforting soup combining tender chicken, gnocchi, and fresh vegetables, perfect for busy weeknights.


Ingredients

  • 1 rotisserie chicken, shredded
  • 1 package of gnocchi
  • 4 cups chicken broth
  • 2 cups spinach
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • Parmesan cheese (optional, for serving)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery; sauté until softened.
  2. Add shredded rotisserie chicken and chicken broth to the pot; bring to a simmer.
  3. Stir in the gnocchi and cook according to package instructions.
  4. Add spinach in the last few minutes of cooking until wilted.
  5. Season with salt and pepper to taste.
  6. Serve hot, optionally topped with Parmesan cheese.

Notes
