Ingredients

- 1 rotisserie chicken, shredded
- 1 package of gnocchi
- 4 cups chicken broth
- 2 cups spinach
- 1 cup diced carrots
- 1 cup diced celery
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
- Parmesan cheese (optional, for serving)
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery; sauté until softened.
- Add shredded rotisserie chicken and chicken broth to the pot; bring to a simmer.
- Stir in the gnocchi and cook according to package instructions.
- Add spinach in the last few minutes of cooking until wilted.
- Season with salt and pepper to taste.
- Serve hot, optionally topped with Parmesan cheese.
Notes
Serve with crusty bread or a simple salad for a complete meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 3 months.
