- 4 boneless, skinless chicken breasts (6–8 oz each)
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 cup freshly grated parmesan cheese
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 2 teaspoons dried Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 teaspoon salt
Instructions
- Pound chicken breasts to about 3/4 inch thickness and pat dry.
- In a bowl, whisk together olive oil, garlic, 1/2 cup parmesan, lemon juice, zest, Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper.
- Marinate chicken for at least 30 minutes, ideally 2-4 hours.
- Preheat grill to medium-high heat (400-425°F) and oil the grates.
- Remove chicken from marinade, reserving it for basting, and grill for 6-7 minutes per side.
- Check for doneness (165°F internal temperature) and allow to rest for 3-5 minutes.
- For optional sauce, melt butter, sauté garlic, add cream and parmesan and whisk until smooth. Season with salt, pepper, and parsley.
Notes
For maximum flavor, marinate overnight if possible. This recipe is also easily adaptable with various herbs and spices.
