Description

Perfectly seasoned grilled chicken skewers marinated to be juicy and flavorful, ideal for tailgating.


Ingredients

  • 2 lbs boneless, skinless chicken thighs (cut into 1.5-inch pieces)
  • 1/4 cup olive oil
  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 medium bell peppers (red and yellow), cut into 1-inch pieces
  • 1 large red onion, cut into chunks
  • 1 medium zucchini, sliced into rounds
  • 2 tablespoons fresh cilantro, chopped (for serving)
  • Lime wedges (for serving)
  • Your favorite BBQ sauce (for serving)
  • 1215 wooden or metal skewers

Instructions

  1. In a large bowl, whisk together olive oil, honey, soy sauce, apple cider vinegar, minced garlic, Dijon mustard, smoked paprika, cumin, oregano, black pepper, salt, and cayenne pepper to prepare the marinade.
  2. Add chicken pieces to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 2 hours or overnight.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Cut bell peppers into 1-inch squares, red onion into chunks, and zucchini into thick rounds.
  4. Remove chicken from marinade (reserve marinade for basting). Thread chicken pieces alternately with vegetables onto skewers, leaving small gaps for even heat circulation.
  5. Preheat grill to medium-high heat (about 375-400°F) and clean/oil the grates.
  6. Place skewers on the grill, cooking for 3-4 minutes per side and basting occasionally with reserved marinade. Total cooking time should be 12-15 minutes or until chicken reaches an internal temperature of 165°F.
  7. Remove skewers from grill and let rest for 2-3 minutes. Garnish with fresh cilantro and serve immediately with lime wedges and BBQ sauce.

Notes

For best results, marinate chicken overnight and prepare everything at home before heading to your tailgate.
