Description

A succulent grilled chicken burger that’s perfect for summer barbecues or weeknight dinners, featuring a flavorful marinade and customizable toppings.


Ingredients

  • 4 boneless, skinless raw chicken breasts (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 brioche burger buns or whole wheat buns
  • 4 slices of your favorite cheese (cheddar, Swiss, or pepper jack)
  • 2 large tomatoes, sliced
  • 4 lettuce leaves (butter lettuce or romaine)
  • 1 large avocado, sliced
  • 1/4 red onion, thinly sliced
  • 4 tablespoons mayonnaise or Greek yogurt
  • 2 tablespoons Dijon mustard
  • Pickle slices (optional)

Instructions

  1. In a large mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, oregano, onion powder, salt, black pepper, and garlic powder. Whisk until well blended.
  2. Place each chicken breast between two pieces of plastic wrap or in a zip-lock bag and pound to an even thickness of about 1/2 inch.
  3. Add the flattened chicken breasts to the marinade, making sure each piece is coated.
  4. Cover the bowl with plastic wrap or seal the bag and refrigerate for at least 30 minutes.
  5. Preheat your grill to medium-high heat (about 375-400°F). Clean and lightly oil the grill grates.
  6. Remove the chicken from the marinade and grill for 6-7 minutes on one side without moving. Flip and cook for another 5-6 minutes or until internal temperature reaches 165°F.
  7. During the last 2 minutes, place a slice of cheese on each chicken breast to melt.
  8. Remove the chicken from the grill and let it rest for 3-5 minutes.
  9. While the chicken rests, slice the tomatoes and toast the burger buns lightly on the grill.
  10. Assemble the burgers by spreading mayonnaise or Greek yogurt on the bottom bun, adding lettuce, grilled chicken with melted cheese, tomato, avocado, and red onion. Top with Dijon mustard and close with the top bun.

Notes

For additional flavor, consider marinating the chicken for up to 4 hours. Customize your toppings to fit your taste!
