Description

A simple and delicious Greek-inspired meal with juicy chicken thighs and vibrant vegetables, all cooked on one pan for easy clean-up.


Ingredients

  • 4 chicken thighs
  • 2 cups mixed vegetables (bell peppers, zucchini, red onion)
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Line a sheet pan with parchment paper.
  3. Place the chicken thighs on the sheet pan and surround them with mixed vegetables.
  4. Drizzle olive oil over everything and sprinkle with oregano, garlic powder, salt, and pepper.
