- 4 chicken thighs
- 1/4 cup olive oil
- Juice of 2 lemons
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Place the chicken thighs in a baking dish and pour the marinade over them, making sure they’re well coated.
- Bake in the preheated oven for about 35-40 minutes, or until the chicken is cooked through and golden brown.
- Garnish with fresh parsley before serving.
Notes
Marinate the chicken for at least an hour for the best flavor; overnight is even better. You can add vegetables for a one-pan meal.
