Description

A delightful dish that combines bright flavors of lemon and herbs, perfect for weeknight dinners or special occasions.


Ingredients

  • 4 chicken thighs
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Place the chicken thighs in a baking dish and pour the marinade over them, making sure they’re well coated.
  4. Bake in the preheated oven for about 35-40 minutes, or until the chicken is cooked through and golden brown.
  5. Garnish with fresh parsley before serving.

Notes

Marinate the chicken for at least an hour for the best flavor; overnight is even better. You can add vegetables for a one-pan meal.
