Description

A simple and flavorful dish featuring ground chicken meatballs served over lemon-infused orzo pasta.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup feta cheese, crumbled
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, mix together ground chicken, breadcrumbs, feta, egg, garlic, oregano, salt, and pepper until well combined. Form mixture into meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook meatballs until golden brown and cooked through, about 10 minutes.
  3. In a separate pot, bring chicken broth to a boil. Add orzo and cook according to package instructions.
  4. Once orzo is cooked, drain excess liquid and stir in lemon juice.
  5. Serve meatballs over the lemon orzo and garnish with fresh parsley.

Notes

For extra creaminess, add a spoon of plain yogurt or tzatziki. Store cooked meatballs and orzo in an airtight container in the refrigerator for up to 3 days.
