Description

Quick and flavorful Greek chicken meatballs served with lemon orzo, perfect for a weeknight dinner.


Ingredients

  • 1 pound ground chicken
  • 1 cup cooked orzo
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh parsley, chopped
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, cooked orzo, breadcrumbs, Parmesan cheese, egg, garlic, oregano, parsley, lemon zest, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in size.
  4. Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides.
  5. Transfer the meatballs to a baking sheet and bake for 15-20 minutes or until cooked through.
  6. Drizzle with lemon juice before serving.

Notes

For best flavor, use fresh herbs. Brown the meatballs before baking for added color and flavor.
