Ingredients

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup feta cheese, crumbled
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 cup orzo pasta
- 2 cups chicken broth
- Juice and zest of 1 lemon
- Chopped fresh parsley for garnish
Instructions
- In a large bowl, mix together ground chicken, breadcrumbs, feta cheese, egg, garlic, oregano, salt, and pepper. Form the mixture into meatballs.
- Heat olive oil in a skillet over medium heat. Cook the meatballs until browned and cooked through.
- In a separate pot, bring chicken broth to a boil. Add orzo and cook according to package instructions.
- Drain the orzo and stir in lemon juice, zest, and parsley.
- Serve the meatballs over the lemon orzo.
Notes
Use room temperature egg for better mixing. Do not overwork the meat mix to keep meatballs tender.
