Description

A fresh and healthy Greek Chicken Bowl featuring grilled chicken, quinoa, vegetables, and a homemade tzatziki sauce.


Ingredients

Scale
  • 2 cups cooked quinoa or brown rice
  • 1 lb chicken breast, grilled and sliced
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 cups mixed greens
  • Salt and pepper, to taste
  • Olive oil, for drizzling
  • Homemade tzatziki sauce

Instructions

  1. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, garlic, lemon juice, and dill in a bowl. Season with salt.
  2. In a large bowl, layer the cooked quinoa or brown rice at the bottom.
  3. Top with grilled chicken, diced cucumber, bell pepper, cherry tomatoes, red onion, olives, and feta cheese.
  4. Add mixed greens on top and drizzle olive oil.
  5. Serve with homemade tzatziki sauce on the side. Enjoy!
