Description

A simple, tasty dinner that combines chicken and potatoes baked together in one dish, infused with garlic and Parmesan flavor.


Ingredients

  • 4 chicken thighs or breasts
  • 4 medium potatoes, diced
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine diced potatoes, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss to coat the potatoes evenly.
  3. In a baking dish, place the chicken and surround it with the garlic potatoes.
  4. Sprinkle the grated Parmesan cheese over both the chicken and potatoes.
  5. Bake for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are golden and tender.
  6. Garnish with fresh parsley before serving.

Notes

Cut potatoes to a similar size for even cooking. Pat chicken dry and season well for better browning. Use freshly grated Parmesan for best taste.
