- 4 chicken thighs or breasts
- 4 medium potatoes, diced
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine diced potatoes, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss to coat the potatoes evenly.
- In a baking dish, place the chicken and surround it with the garlic potatoes.
- Sprinkle the grated Parmesan cheese over both the chicken and potatoes.
- Bake for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are golden and tender.
- Garnish with fresh parsley before serving.
Notes
Cut potatoes to a similar size for even cooking. Pat chicken dry and season well for better browning. Use freshly grated Parmesan for best taste.
