Description

A simple and tasty dish that’s perfect for busy weeknights, featuring juicy chicken breasts and sweet baby carrots, all infused with garlic and herbs.

Ingredients

Scale
  • 4 chicken breasts
  • 2 cups baby carrots
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  3. Place the chicken breasts in a baking dish and coat them with the garlic herb mixture.
  4. Add the baby carrots around the chicken in the dish.
  5. Bake for 25-30 minutes or until the chicken is cooked through and the carrots are tender.
  6. Garnish with fresh parsley before serving.

Notes

Make sure not to overcook the chicken; let it rest for a few minutes after baking to keep it moist. You can add your favorite vegetables for extra color and nutrients.
