- 4 medium potatoes, diced
- 4 tablespoons butter
- 4 cloves garlic, minced
- 2 teaspoons Italian seasoning

Instructions
- In a large skillet over medium heat, melt the butter.
- Add the diced potatoes and cook until they are golden and tender, about 10-12 minutes.
- Push the potatoes to the side of the skillet and add the chicken thighs.
- Season the chicken with Italian seasoning, salt, and pepper, and brown on both sides, about 5-7 minutes per side.
- Add minced garlic and cook for another minute until fragrant.
- Stir everything to combine, and cook for an additional 5 minutes.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, let the chicken marinate with the Italian seasoning for an hour before cooking. For crispier potatoes, boil them for a few minutes before adding to the skillet.
