Description

A one-skillet meal of tender chicken thighs and crispy potatoes, richly flavored with garlic and butter, perfect for busy nights.


Ingredients

  • 4 chicken thighs
  • 4 medium potatoes, diced
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet over medium heat, melt the butter.
  2. Add the diced potatoes and cook until they are golden and tender, about 10-12 minutes.
  3. Push the potatoes to the side of the skillet and add the chicken thighs.
  4. Season the chicken with Italian seasoning, salt, and pepper, and brown on both sides, about 5-7 minutes per side.
  5. Add minced garlic and cook for another minute until fragrant.
  6. Stir everything to combine, and cook for an additional 5 minutes.
  7. Garnish with fresh parsley before serving.

Notes

For extra flavor, let the chicken marinate with the Italian seasoning for an hour before cooking. For crispier potatoes, boil them for a few minutes before adding to the skillet.
