Description

A comforting dish combining tender chicken with rich onion flavors, cheese, and herbs, perfect for family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme (dried or fresh)
  • 1 cup beef or chicken broth
  • 1 ½ cups Swiss cheese, shredded
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and sprinkle with salt. Cook until the onions are soft and lightly caramelized, about 15-20 minutes.
  3. Season the chicken breasts with pepper and thyme, and place them in a baking dish.
  4. Pour the broth over the chicken, then spread the caramelized onions evenly on top.
  5. Cover the dish with aluminum foil and bake for 25-30 minutes until the chicken is cooked through.
  6. Remove the foil, sprinkle shredded Swiss cheese on top, and bake for an additional 10 minutes until the cheese is melted and bubbly.
  7. Let it cool for a few minutes and garnish with fresh parsley before serving.

Notes

For extra flavor, add a splash of white wine to the onions or sprinkle breadcrumbs on top before the final bake.
