- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme (dried or fresh)
- 1 cup beef or chicken broth
- 1 ½ cups Swiss cheese, shredded
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the sliced onions and sprinkle with salt. Cook until the onions are soft and lightly caramelized, about 15-20 minutes.
- Season the chicken breasts with pepper and thyme, and place them in a baking dish.
- Pour the broth over the chicken, then spread the caramelized onions evenly on top.
- Cover the dish with aluminum foil and bake for 25-30 minutes until the chicken is cooked through.
- Remove the foil, sprinkle shredded Swiss cheese on top, and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Let it cool for a few minutes and garnish with fresh parsley before serving.
Notes
For extra flavor, add a splash of white wine to the onions or sprinkle breadcrumbs on top before the final bake.
