Quick and delicious chicken thighs in a flavorful soy garlic sauce, perfect for busy weeknights.

- 1 lb boneless skinless chicken thighs
- 3 tbsp potato starch
- 3 tbsp all-purpose flour
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp neutral oil for pan frying
- 8 cloves garlic (minced)
- 2 stalks green onion (green and white parts separated)
- 1 tsp red chili flakes
- 1/2 cup chicken stock (or water & chicken bouillon)
- 3 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp dark soy sauce
- 1 tsp cornstarch
- Green onion (green part, for garnish)
- Sesame seeds (for garnish)
Instructions
- In a bowl, combine the sauce ingredients: chicken stock, honey, rice vinegar, dark soy sauce, and cornstarch. Mix well and set aside.
- Dry the chicken thighs with a paper towel. Mix the potato starch, flour, garlic powder, salt, and pepper on a plate. Coat both sides of the chicken with this mixture.
- Heat neutral oil in a frying pan over medium-high heat. Once hot, add the chicken thighs and fry until golden brown, about 7 minutes per side. Remove and set aside.
- Add minced garlic, white parts of green onion, and red chili flakes to the same pan. Sauté for about 3 minutes until the garlic is golden brown.
- Pour the sauce into the pan and cook for 1 minute or until thickened.
- Add the chicken back to the pan, cooking for another 5 minutes to coat in sauce and ensure it’s cooked through.
- Serve warm with vegetables and rice, garnished with green onions and sesame seeds.
Notes
Ensure oil is hot to create a crispy exterior. Adjust garlic and chili flakes to taste.
