- 1.25 lb boneless skinless chicken breasts, cut into 1-inch pieces
- 6 tbsp beaten egg (about 2 eggs)
- 1.25 cup pork rind crumbs, finely crushed
- 0.5 cup blanched almond flour
- 0.33 cup grated Parmesan cheese
- 1 tsp garlic powder
- 0.75 tsp onion powder
- 0.75 tsp smoked paprika
- 0.75 tsp fine sea salt
- 0.5 tsp black pepper (freshly ground)
- 1 tbsp avocado oil (for brushing or misting)
Instructions
- Cut chicken into 1-inch pieces and dry them with a paper towel.
- Beat the eggs in a shallow bowl.
- Mix pork rind crumbs, almond flour, Parmesan, and spices in another bowl.
- Dip each chicken piece into the beaten egg, then press into the crumb mix so each nugget is well coated.
- Place nuggets in a single layer in the air fryer basket without crowding.
- Brush or mist the tops with avocado oil.
- Air fry at 400°F (200°C) for 8–10 minutes, turning once halfway through, until golden and the inside reaches 165°F (74°C).
- Remove and rest for 2 minutes before serving.
Notes
Pat chicken dry for better coating adherence. Use a meat thermometer to ensure safe cooking.
