Description

Crispy and juicy chicken nuggets made easy with the air fryer, perfect for keto diets.


Ingredients

  • 1.25 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 6 tbsp beaten egg (about 2 eggs)
  • 1.25 cup pork rind crumbs, finely crushed
  • 0.5 cup blanched almond flour
  • 0.33 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 0.75 tsp onion powder
  • 0.75 tsp smoked paprika
  • 0.75 tsp fine sea salt
  • 0.5 tsp black pepper (freshly ground)
  • 1 tbsp avocado oil (for brushing or misting)

Instructions

  1. Cut chicken into 1-inch pieces and dry them with a paper towel.
  2. Beat the eggs in a shallow bowl.
  3. Mix pork rind crumbs, almond flour, Parmesan, and spices in another bowl.
  4. Dip each chicken piece into the beaten egg, then press into the crumb mix so each nugget is well coated.
  5. Place nuggets in a single layer in the air fryer basket without crowding.
  6. Brush or mist the tops with avocado oil.
  7. Air fry at 400°F (200°C) for 8–10 minutes, turning once halfway through, until golden and the inside reaches 165°F (74°C).
  8. Remove and rest for 2 minutes before serving.

Notes

Pat chicken dry for better coating adherence. Use a meat thermometer to ensure safe cooking.
