- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crockpot.
- Add the chopped sun-dried tomatoes, spinach, garlic, Italian seasoning, salt, and pepper on top of the chicken.
- Pour the chicken broth and heavy cream over the mixture.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken and stir everything together before serving.
