- 3 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 8 ounces deli ham, chopped
- 2 cups Swiss cheese, shredded (divided)
- 1 cup Gruyère cheese, shredded (optional)

- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 2 teaspoons Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- 2 cups panko breadcrumbs
- 1/2 cup Parmesan cheese, grated
- 4 tablespoons unsalted butter, melted
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook chicken in a skillet until golden and cooked through, about 6-8 minutes.
- Make a roux with butter and flour, then gradually add milk and cream, whisking until thickened.
- Stir in Dijon mustard, garlic powder, onion powder, salt, pepper, and nutmeg into the sauce.
- Add cooked chicken, chopped ham, and 1½ cups of Swiss cheese to the bowl with the sauce.
- Pour the mixture into the prepared baking dish and top with remaining Swiss cheese.
- Mix panko breadcrumbs, Parmesan cheese, melted butter, parsley, and garlic powder in a bowl, then sprinkle over the casserole.
- Bake uncovered for 30-35 minutes, until the topping is golden brown.
- Let rest for 5-10 minutes before serving.
Notes
For a healthier twist, substitute half-and-half for the heavy cream and reduce the butter in the topping. You can also use rotisserie chicken for a quicker preparation.
