Description

A comforting casserole version of the classic chicken cordon bleu, featuring tender chicken, smoky ham, and melted Swiss cheese topped with a crispy panko breadcrumb crust.

  • 3 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 8 ounces deli ham, chopped
  • 2 cups Swiss cheese, shredded (divided)
  • 1 cup Gruyère cheese, shredded (optional)
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 teaspoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 2 cups panko breadcrumbs
  • 1/2 cup Parmesan cheese, grated
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook chicken in a skillet until golden and cooked through, about 6-8 minutes.
  3. Make a roux with butter and flour, then gradually add milk and cream, whisking until thickened.
  4. Stir in Dijon mustard, garlic powder, onion powder, salt, pepper, and nutmeg into the sauce.
  5. Add cooked chicken, chopped ham, and 1½ cups of Swiss cheese to the bowl with the sauce.
  6. Pour the mixture into the prepared baking dish and top with remaining Swiss cheese.
  7. Mix panko breadcrumbs, Parmesan cheese, melted butter, parsley, and garlic powder in a bowl, then sprinkle over the casserole.
  8. Bake uncovered for 30-35 minutes, until the topping is golden brown.
  9. Let rest for 5-10 minutes before serving.

Notes

For a healthier twist, substitute half-and-half for the heavy cream and reduce the butter in the topping. You can also use rotisserie chicken for a quicker preparation.
