- 1 rotisserie chicken, shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 teaspoon black pepper
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
Instructions
- In a large pot over medium heat, combine chicken broth, heavy cream, diced carrots, celery, and onion. Bring to a simmer.
- In a bowl, mix flour, baking powder, salt, and pepper. Add milk and melted butter, stirring until just combined to form a dough.
- Drop spoonfuls of the dumpling mixture into the simmering broth and cook for about 15 minutes, covered, until the dumplings are fluffy and cooked through.
- Stir in shredded rotisserie chicken and heat through. Serve warm.
Notes
Use warm broth to help the dumplings cook evenly. Do not lift the lid while the dumplings cook; steam helps them rise. Store broth and dumplings separately for best texture.
