Description

A quick and cozy dish featuring soft dumplings and shredded rotisserie chicken in a creamy broth.


Ingredients

  • 1 rotisserie chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon black pepper
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced

Instructions

  1. In a large pot over medium heat, combine chicken broth, heavy cream, diced carrots, celery, and onion. Bring to a simmer.
  2. In a bowl, mix flour, baking powder, salt, and pepper. Add milk and melted butter, stirring until just combined to form a dough.
  3. Drop spoonfuls of the dumpling mixture into the simmering broth and cook for about 15 minutes, covered, until the dumplings are fluffy and cooked through.
  4. Stir in shredded rotisserie chicken and heat through. Serve warm.

Notes

Use warm broth to help the dumplings cook evenly. Do not lift the lid while the dumplings cook; steam helps them rise. Store broth and dumplings separately for best texture.
