Description

Golden, crispy flatbread topped with BBQ chicken, melted cheese, and fresh herbs make these bite-sized snacks a perfect crowd-pleaser.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 3/4 cup warm water (110°F)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 2 cups cooked chicken breast, diced
  • 1/2 cup barbecue sauce (divided)
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon olive oil for brushing
  • Salt and pepper to taste
  • Optional: 1 jalapeño, thinly sliced for heat

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Stir gently and let stand for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour, salt, and garlic powder. Make a well in the center and pour in activated yeast mixture and olive oil. Mix until a soft dough forms.
  3. Knead dough for 8-10 minutes on a floured surface until smooth and elastic. If too dry, add water one tablespoon at a time.
  4. Place the dough in an oiled bowl, cover with a damp towel, and let it rise in a warm place for 30 minutes.
  5. Season diced chicken with 1/4 cup barbecue sauce, salt, and pepper.
  6. Preheat oven to 450°F (230°C). Roll flatbread dough into thin ovals or rectangles.
  7. Transfer rolled flatbread to a parchment-lined baking sheet. Brush lightly with olive oil and bake for 3-4 minutes.
  8. Spread remaining 1/4 cup barbecue sauce over flatbread, then add BBQ chicken mixture and sprinkle with both cheeses.
  9. Bake for 10-12 minutes until cheese is melted and bubbly, and edges are golden brown.
  10. Remove from oven, sprinkle with red onions and cilantro, and let cool for 2-3 minutes before cutting into bite-sized pieces.

Notes

These flatbread bites are customizable. For added heat, include jalapeños. For a vegetarian option, substitute shredded veggies for the chicken.
