- 4 Chicken breasts
- Salt and pepper to taste
- 2 tablespoons Olive oil
- 2 tablespoons Butter
- 3 Garlic cloves, minced
- 1 Onion, diced
- 1 cup Mushrooms, sliced
- 1 cup Rice (uncooked)
- 2 cups Chicken broth
- 1 cup Heavy cream
- Fresh Parsley for garnish
Instructions
- Prepare the Chicken: Rinse and pat dry the chicken, season with salt, pepper, and spices, then set aside.
- Sauté the Chicken: Heat olive oil in a skillet over medium-high heat, cook chicken for 4-5 minutes on each side until golden brown, then remove and set aside.
- Create the Creamy Sauce: Sauté diced onions and garlic in the skillet for 3-4 minutes, deglaze with chicken broth, stir in heavy cream and seasoning until thickened.
- Add the Rice: Mix uncooked rice into the sauce, nestle chicken back in, cover, and simmer for 20-25 minutes.
- Finish and Serve: Garnish with parsley and serve warm, ideally with vegetables or crusty bread.
