Description

A hearty and flavorful Crock Pot Jambalaya cooked slowly with chicken, sausage, and rice for an easy weeknight meal.


Ingredients

  • 1 lb chicken, diced
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 2 cups uncooked long-grain rice
  • 2 tablespoons Cajun seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a Crock Pot, combine the chicken, sausage, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, rice, Cajun seasoning, bay leaf, salt, and pepper.
  2. Stir to mix well.
  3. Cover and cook on low for 6-8 hours or until the rice is cooked and the flavors are well blended.
  4. Remove the bay leaf before serving.
  5. Garnish with green onions and serve hot.

Notes

For best results, use long-grain rice to avoid stickiness and don’t lift the lid frequently during cooking.
