- 3 Pounds Chicken Thighs (Boneless, skinless)
- 1 Cup Light Brown Sugar
- 1 Cup Soy Sauce
- 1/3 Cup Bourbon Whisky
- 2 Tablespoons Apple Cider Vinegar
- 1/2 teaspoon Ground Ginger
- 1 Tablespoon Honey
- 1/2 teaspoon Red Pepper Flakes
- 4 Cloves Garlic
- 3 Tablespoons Cornstarch
- 2 Tablespoons Water
- 1/4 Cup Green Onions
Instructions
- Place the chicken thighs (well trimmed) into the slow cooker.
- In a medium mixing bowl, add the remaining ingredients (except the cornstarch, water, and green onions). Mix together with a whisk.
- Pour the mixture over the top of the chicken thighs.
- Cover and cook on high for 4 hours, or low for 6 hours.
- Once done, remove the chicken thighs to a plate and roughly chop them.
- In a separate bowl, mix the cornstarch and water until the cornstarch is dissolved.
- Pour this mixture into the sauce in the crock pot and whisk to combine.
- Add the chopped chicken back into the sauce and stir well. Cover again and allow it to bubble for a few minutes before turning off the crock pot.
- Sprinkle with chopped green onions and serve over rice.
Notes
Trim excess fat from the chicken for a healthier dish. For a thicker sauce, let it cook uncovered for the last 30 minutes. Customize by adding favorite vegetables during the last hour of cooking.
