Description

A delicious, comforting dish featuring sweet and savory flavors, perfect for busy weeknights or cozy family gatherings.


Ingredients

  • 3 Pounds Chicken Thighs (Boneless, skinless)
  • 1 Cup Light Brown Sugar
  • 1 Cup Soy Sauce
  • 1/3 Cup Bourbon Whisky
  • 2 Tablespoons Apple Cider Vinegar
  • 1/2 teaspoon Ground Ginger
  • 1 Tablespoon Honey
  • 1/2 teaspoon Red Pepper Flakes
  • 4 Cloves Garlic
  • 3 Tablespoons Cornstarch
  • 2 Tablespoons Water
  • 1/4 Cup Green Onions

Instructions

  1. Place the chicken thighs (well trimmed) into the slow cooker.
  2. In a medium mixing bowl, add the remaining ingredients (except the cornstarch, water, and green onions). Mix together with a whisk.
  3. Pour the mixture over the top of the chicken thighs.
  4. Cover and cook on high for 4 hours, or low for 6 hours.
  5. Once done, remove the chicken thighs to a plate and roughly chop them.
  6. In a separate bowl, mix the cornstarch and water until the cornstarch is dissolved.
  7. Pour this mixture into the sauce in the crock pot and whisk to combine.
  8. Add the chopped chicken back into the sauce and stir well. Cover again and allow it to bubble for a few minutes before turning off the crock pot.
  9. Sprinkle with chopped green onions and serve over rice.

Notes

Trim excess fat from the chicken for a healthier dish. For a thicker sauce, let it cook uncovered for the last 30 minutes. Customize by adding favorite vegetables during the last hour of cooking.
