A delicious fusion of crispy Parmesan crusted chicken and classic Caesar salad, perfect for lunch or dinner.

- 4 boneless, skinless chicken breasts (6–8 oz each)
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- 2 teaspoons garlic powder
- 1 teaspoon dried Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons olive oil
- 1/2 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1/4 cup freshly grated Parmesan cheese
- 2 anchovy fillets, minced (optional)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 4 sub rolls or hoagie buns
- 6 cups romaine lettuce, chopped
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 tablespoons capers (optional)
Instructions
- Preheat the oven to 425°F (220°C). Pound the chicken to 1/2-inch thickness and season with salt and pepper.
- Set up a breading station with flour in one dish, beaten eggs in another, and a mixture of panko, Parmesan, garlic powder, Italian seasoning, paprika, salt, and pepper in a third dish.
- Dredge each chicken breast in flour, dip in beaten eggs, then coat with the breadcrumb mixture.
- Place on a wire rack over a baking sheet, drizzle with olive oil, and bake for 18-22 minutes until golden and cooked through.
- In a small bowl, whisk together mayonnaise, lemon juice, garlic, Dijon, Worcestershire sauce, and Parmesan. Season with salt and pepper.
- Prep the salad components: chop romaine, halve cherry tomatoes, and slice red onion.
- Slice the baked chicken and assemble the subs with dressing, romaine, chicken, tomatoes, onion, and capers.
Notes
Double-coat chicken for extra crunch. Use fresh Parmesan for best results.
