Description

A delicious fusion of crispy Parmesan crusted chicken and classic Caesar salad, perfect for lunch or dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (68 oz each)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/4 cup freshly grated Parmesan cheese
  • 2 anchovy fillets, minced (optional)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 sub rolls or hoagie buns
  • 6 cups romaine lettuce, chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 tablespoons capers (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Pound the chicken to 1/2-inch thickness and season with salt and pepper.
  2. Set up a breading station with flour in one dish, beaten eggs in another, and a mixture of panko, Parmesan, garlic powder, Italian seasoning, paprika, salt, and pepper in a third dish.
  3. Dredge each chicken breast in flour, dip in beaten eggs, then coat with the breadcrumb mixture.
  4. Place on a wire rack over a baking sheet, drizzle with olive oil, and bake for 18-22 minutes until golden and cooked through.
  5. In a small bowl, whisk together mayonnaise, lemon juice, garlic, Dijon, Worcestershire sauce, and Parmesan. Season with salt and pepper.
  6. Prep the salad components: chop romaine, halve cherry tomatoes, and slice red onion.
  7. Slice the baked chicken and assemble the subs with dressing, romaine, chicken, tomatoes, onion, and capers.

Notes

Double-coat chicken for extra crunch. Use fresh Parmesan for best results.
